Ahhhh what a good morning its is! Even though, I only got 6 hours of sleep (sometimes less) I am feeling pretty good, a little tired but good. As I type this I am also eating and having my tea, and looking forward to enjoying my day. Right now, I can’t help but think about what I am going to cook for dinner today. I have really been wanting some tofu. I guess I will have to make a trip to the store. A nice tofu scramble is sounding really good right about now. I’ve always found myself kind of stumped when it comes to making a good tofu scramble, BUT one day I just thought to myself maybe I should just jump out on a limb and experiment! (mad scientist sounds in background) . It was the best experiment I tried in a while, so simple yet delicious. A few simple ingredients make a yummy tofu scramble. I know that some may not really get into tofu, but for those of you who are here is the simple recipe.

Tofu Scramble

*12 oz block of extra firm tofu, crumbled
*1 T canola oil ( use a good nonstick skillet)
*1 shallot
*1 medium roma tomato (or more if you love tomatoes like me)
*1 teaspoon garlic powder
*onion powder to taste
*soy sauce to taste
*pinch sugar
*salt if desired

In a good nonstick skillet, sautee minced shallot in oil until translucent. Add crumbled tofu, then tomatoes, and lastly add the seasoning and pinch of sugar (literally). Cook tofu until heated through. When I seasoned the tofu, it was to taste so measurements are approximate. You can add whatever veggies you like, so possibilities are endless. I hope you all enjoy!
